How does one change an accepted answer?

EDIT: recent changes to MATLAB Answers allow the original question poster to un-accept an answer.
- It is possible for the author of that answer to delete the answer, in which case there will be no longer be any accepted answer (leaving you free to accept another one). So if you think it is important you can try to convince them to delete their answer.
- It is also possible for forum members with enough privileges to delete answers or un-accept them, but unless the answer is totally wrong and misleading it is unlikely that that will occur. However if you think that that answer fits into this category then flag it with an appropriate explanation.
- You can write a very polite email to TMW, asking them to un-accept the answer.
Note that your original question is ambiguous: I answered the question "How can one un-accept an Answer?", not the other interpretation of "How can one edit an Answer?"
PS: Most volunteers here try to answer your question: if you later change your mind about what the question actually is, then this would not be considered a fair reason for un-accepting an answer: an Answer that correctly resolves your original question is still correct. If you realize that you actually need to solve your problem in another way, then this does not change the correctness of the answer that they gave based on your original information. In plain English: it is not fair to move the goalposts. Ask it as a new question, or add a comment.

The staff at Mathworks can un-accept answers; the volunteers do not have that ability.

i think , author of the answer has ability to delete his own question

The author of the Answer could delete their own Answer, yes, would probably not do so if the answer is informative or was a valid interpretation of what was known about the Question at the time the Answer was made.

(Answers dev) We released the answer unacceptance feature on 4/13/2016. Questioners may now unaccept answers. Other users with 500+ reputation may unaccept answers after 7 days. Please note that no points are removed from the answerer's reputation via unacceptance.

you can flag the wrong accepted answer with explanation to undo it

Yes. However, the volunteers do not have the ability to un-accept Answers, only some of the Mathworks staff do. And the Mathworks staff rarely check the flagged material.
