Plotting an Intensity profile out of a 3D Matrix

Hello,

I have a 80x80x80 3D Matrix which shows the x and y coordinate and the associated Intensity.

I want to plot this in 2D as a "colormap" so it should look like these in the End:

I am a totally newbie at Matlab and couldn't find any working solution until now. Hopefully someone can help me. Thank you :)
