How do I set up a data acquisition code in MATLAB without having the actual hardware?

I am trying to write a code for a shutdown system that will insert shutdown plates if a there is an exceeded threshold in the temperature sensor, flood sensor, seismic sensor, fire sensor, door sensor. However, I am not able to get the actual sensors. All of the documentation I found involves having the actual hardware.

If your target H/W are NI, You can use Measurement & Automation Explorer (MAX). it is emulator without H/W. And you can download as support package.
