Curve Fitting for Artificial Topography

Hi there,
My aim is create artifical topography for a portion of a hillslope from the surronding area. I have northing, easting and elevation values in (X,Y,Z) format that need interpolation via curve fitting. I am able to create a surface model in the app but I need assistance in exporting the surface generated in the curve fitting app to a text file, point cloud, or gridded dataset (basically anything that can be used in geospatial software).
I have tried creating a meshgrid from the X,Y values and appling the fittedmodel output but this has not been successful for some reason.
Any guidence would be much appericated.

I have no idea what you are asking for here. Note that my gridfit tool has an example where I took scattered data from a hillside. Since gridfit builds a gridded surface itself, the result would seem to be exactly what you are looking for. gridfit is on the File Exchange, just download it and read the examples.
