I guess that your virus protection blocks the access to your Documents folder. E.g. BitDefender does this and as far as I know Microsofts Defender can restrict the access also. So open your virus protection software and insert Matlab as accepted program to access this folder.

You can just create such a folder so that MATLAB won't bother you any more.
