How to extract only plant from this NIR image

Why not use a color image? It would be so much easier to just find green pixels.

I used color image and extracted only plant for disease identification studies and nutrient studies. Here the objective is to find the water content of the plant using NIR camera.

If you have a question, ask a question. Since the original question was never well defined, you have no idea whether it is appropriate for your needs.

As to the original question, if this scene were illuminated with NIR and imaged in NIR, I would not expect it to look like this at all. The appearance and setting suggests to me that it's illuminated with visible light and imaged with a wide NIR filter that's mostly just picking up the red tail of the illuminator's SPD. In other words, this is probably an entirely pointless handicap added to what is otherwise a visible-light imaging process.

Again, I might be wrong. Nobody really knows what the setup was, so nobody can know how to use the available information.
