What are some features to help me analyse a CNNs performance?

Hi,

I've developed a CNN in MATLAB for medical image classification. I'm looking to get some useful analytics to help me understand what the network has actually learned/ what its actually doing in different layers. Viewing features/ activations has been pretty helpful in gaining an understanding of whats actually going on, but I wondered if there are any other techniques available to me in MATLAB.
