How can I make scatter plots between 2 data set

I have different raster datasets from Arcmap showing different vegetation indices all varying from -1 to 1. I want to make a scatterplot to compare the indices in each pixel. Their format is GRID and pixel type is floating point. Can anyone help please on how to do this in matlab?
