Phi_fitted = fit(Phi2_y',Phi2_Phi','gauss8');

Above command makes a fit. But how to make a plot of fitted curve and data? (CODE ONLY)

You can use 'plot' function to plot the data and the fitted curve.

For example, in your case, you can plot the data and the fitted curve by using the following command:

>> plot(Phi_fitted, Phi2_y', Phi2_Phi');
