First off, there are a few built-in blocks that represent single-phase induction motors:
I'd recommend using Simscape Power Systems so that you can leverage the Universal Bridge block. You can set this up to have 1 bridge arm (single-phase) and use Thyristors (SCRs) as the switching device. Should be relatively easy, though it's not a high-fidelity transistor block.
If you want to model a higher-fidelity converter, I'd suggest using Simscape Electronics and grabbing some Thyristor blocks, connecting them as in this link. These have exponential or lookup table based transistor models that optionally let you incorporate thermal effects.
Beyond that, you can design your own controller that switches the thyristors to control the speed of the machine. Simscape Power Systems, for instance, has several pulse generator blocks in the "Control and Measurement" library you can leverage.
