Why does my SimBiology interface (2nd screenshot) look different from the one shown in the tutorial video (1st screenshot)?

It will depend on what version of MATLAB you are using, and what version was used to record the tutorial.

There were some pretty significant updates made to the UI. It is likely new tutorial videos have not been created yet that use the updated interface.

To reiterate what Cris said, the MATLAB version in the video mentioned above is R2019a. In the newer versions of MATLAB, SimBiology interface is updated (and there are now two SimBiology apps: SimBiology Model Builder and SimBiology Model Analyzer). We will update this video.

In the meantime, please refer to this doc page for current information on Doses and this video for simulating with doses using SimBiology Model Analyzer.
