extrapolation and interpolation of matrix values

I have a 25x25 matrix, of measured pressure coeficients, where the only values different from 0 are the ones in the central cross. How can I get the other values using extrapolation and interpolation?

It depends on the assumptions about the result. If you e.g. assume, that the output is a plave or rotated parabola, the results are different. There is no general scheme for a valid extrapolation.
