Please direct me to tutorial or best learning course for ThingSpeak Visualizations Functions

I see the ThingSpeak Matlab visualizations examples, but where can I see all the functions available instead of just a few examples. I am ready and and willing to learn more.

The MATLAB documentation is well known to be high quality. I also strongly reccomend starting with the MATLAB onramp to get oriented in many of the secial helpful features of the language.
