Hi,
I would like to add a plot axis with information given by user to the waitbar handle. In this axis we might plot anything we want: for example , the percentage of the progress bar along time or some data which requires computer-intensive processing. I do not even know how to start. Hence, any help is be appreciated.
Best regards,

It's much easier to write your own.
For general advice and examples for how to create a GUI (and avoid using GUIDE), have look at this thread.

waitbar() returns the handle of a traditional figure.
wb = waitbar(stuff)
Data is stored against the figure handle and can be retrieved:
wbhandles = guidata(wb);
Now wbhandles.axes will be the handle to the axes that the waitbar created, and you can manipulate that handle, including drawing or changing graphics objects there.
