I am considering to use ThingSpeak for my use case which is electric motor drive where I want to do a predictive maintanace for.
Is it possible to use ThingSpeak to develop and evaluate the AI/ML model for such purpose and the deploy on realtime microcontroller?

Sure it is possible, but you will need to be pretty explicit about what you are trying to do, and you may have to use workarounds to get it done. (such as retreiving a model from an external source)
I have a model that predicts the charge state of a solar powered battery in ThingSpeak, the data is sent from a microcontorlller and Timecontrol make sure ThingSpeak updates the prediction daily.
