What do the x- and y-axes of this pulse oximeter signal represent?

What do the x-Coordinate and y-Coordinate mean? And what is the range of y?

x is most likely time. If it's an oscilloscope, the y is voltage but if it's a custom program, y could represent "percent oxygen" or something else.

How are you collecting data? Do you have an oscilloscope hooked up to the thing? Do you have any kind of calibration factor that converts voltage into percent oxygen?

Well to convert to %O you're going to need a calibration factor to convert your voltage into %O. Consult your manual or teacher for assistance.
