stereographic plots of any data, not necessarily geo data

Let´s say I have a matrix of data, temperature for example or even an image. Each column corresponds to a zenital angle of observation for a hemisphere. Each row corresponds to an azimuthal angle of observation for that hemisphere. How can I plot these data resulting in a polar stereographic plot? NOTE: My MATLAB does not have the Mapping Toolbox
