How can I copy text extracted from an image to a SPECIFIC file using MATLAB?

I am still a beginner, I know very little. I am learning how to extract text from an image using MATLAB. But all the tutorials only teach recognizing characters. Suppose, I took the image of a book page. I extracted all the characters and now I want to store them in a file that I specified in my code, in the exact same manner as it was in the book. How do I do it? I want the file to be specific because I'm later on going to use this file to convert this text to speech.

I feel like I know very little to get this article completely. Can you just tell me if it is possible to use the extracted text as input for tts?
