How to co-locate data from various profiles using MATLAB?

Hello, so I have been studying some research papers on GNSS Radio Occultation, specifically the bending angle anomaly detection for the volcanic ash plume height detection. My goal is to gather last 6 months data for each lat long point and then average it to derive a reference climatology profile from the data set. The current dataset will be subtracted from the mean reference climatology to see the percentage change in the bending angle and the heighest peak will represent the ash plume height altitutde.
However, I am quite confused when it comes to deriving a reference climatology profile. I have studied papers and most of them have refered to using some adhoc MATLAB colocation algorithm for colocating COSMIC 2 profiles. Can anyone explain it please? I have attached some images for reference just in case you need more information.
