Converting a figure plot into a matrix

Hello All, i am working i have a code that generates a plot for me. I was wondering if it was possible to create a matrix data set out of the plot.

I would be grateful for any help. Thanks.

PS: an extract to my code is;

>> h = plot(xe{i},ye{i},'r','LineWidth',2); This generates a series of ellipses and i will want to capture the ellipses (and their elements) as a matrix
